A belated DFM!

I know it's Tuesday but sadly I was mega busy yesterday and didn't have time to put this post up, as it happens it's much better because I actually made this recipe today!


Today's Dairy Free Monday recipe is : Coffee and Walnut loaf!



You will need :
100g golden caster sugar (you can use normal but I find this makes it taste even nicer!)
100g self raising flour
100g dairy free margarine (or if you can have it then butter!)
2 medium sized eggs
50g of walnuts (take some out to decorate!)
1 tbsp strong black coffee (you can use more or less depending on how much you want it to taste of coffee!)


For the icing:
2 tsp strong black coffee
100g sifted icing sugar
50g dairy free margarine (or butter) 

First cream together the sugar and margarine until light and fluffy.
 Beat in the eggs one at a time whilst adding in half of the flour with each one. 
Chop/break up your walnuts and add them into the mixture along with your coffee. 
Give it all a good mix and then pour into a lined loaf tin or cake tin of your choice (please note different sized tins will take different amounts of time! Don't want you to burn your lovely cake!)
Bake for around 45 minutes or until you can poke a skewer into the middle and it comes out clean.
Leave to cool

In the mean time beat the margarine and gradually add in the icing sugar until it is all incorporated.
Gradually add in your coffee (please make sure it's cold otherwise the mix will split!).
Leave to chill in the fridge until ready to put on your cake!

When the cake is cool you can have fun icing it and decorating it however you please, one of these days I want to get a piping bag and have a go at that but for this cake I just splodged (technical term! lol) it all on the top and then put some walnuts down the middle :)
